Ingredients:
1 cup of shortening
1/2 cup of brown sugar
1/2 cup of white sugar
1 egg
2 1/2 cup of flour
3/4 teaspoon of baking soda
1/4 teaspoon of salt
3/4 cup of finely chopped walnuts
1/2 teaspoon of cinnamon (to sprinkle over the cookies)
Optional: red and green sugar sprinkles
Directions:
Preheat the oven to 350 degrees. Begin to cream together the shortening, brown sugar, and white sugar with a stand mixer or by hand. Once combined until fluffy, add in the egg and beat well.
In a separate bowl, you will combine the remaining dry ingredients: flour, baking soda, and salt. Slowly add the dry ingredients into the butter/sugar mixture. Make sure everything is well combined. Lastly, fold in the chopped walnuts.
Once the dough is complete, form it into a ball and store it in the fridge for at least an hour. Then, remove the dough and split into two parts. The next step is to make a loaf shape with each part by using wax paper. Once the dough is properly shaped, you have the option to roll them in red and green sugar sprinkles to add festive colors! Cover it again with the wax paper and store in the freezer for 2 hours at least. Overnight is preferred.
Remove from the freezer and let it sit out for at least 5 minutes to soften before cutting. Slice each piece about 1/2 in size. Place on a baking sheet and sprinkle cinnamon on top before placing in the oven. Bake for 8 to 10 minutes. Let cool and enjoy!
