Sweet Potato, Pecan, Cranberry Surprise


  • 1/3 cup dried cranberries

  • 1/3 cup light brown sugar

  • 3 TB butter (melted)

  • 1 tsp cinnamon

  • 2 pounds sweet potatoes

  • 1/3 cup chopped pecans

  • 1/2 tsp nutmeg


Preheat oven to 400 degrees. Line a 9" round cake or pie pan with foil and coat with nonstick spray. In a small bowl mix everything. Put potatoes togehter and set aside. Peel potatoes together and slice very thin. Spoon 1/3 of cranberry, pecan mixture on bottom of pan. Arrange 1/3 of sweet potatoes slices in concentric circles, overlapping in bottom of pan. Spread another 1/3 of cranberry mixture over potatoes, top with the last 1/3 of crnaberry mixute. Last, arrange remaining sweept potato slices on top. 

Coat a sheet of foil with cooking spray and lightly place over potatoes. Bake for 45 minutes, remove top foild and bake another 20 mintues or lil brown and crisp on top and potatoes are tender. Place a serving plate or cake plate on top of cake pan and *invert immediately. Remove foil from top and serve.
