Cookie Ingredients:
2 sticks of butter, softened
3 cups of flour
1/2 teaspoon of baking soda
1 teaspoon of salt
1 cup of sugar
2 eggs
1 Tablespoon of vanilla extract
Directions:
Preheat oven to 375 degrees. In a separate bowl, combine flour, baking soda, & salt and set aside. In your stand mixer bowl, cream the butter until it's pale yellow. Gradually add in the sugar and beat for about 2 minutes until it's soft and almost white. Add in the eggs and vanilla, scraping the bowl to ensure it is all mixed well. On low speed, gradually add in your dry ingredient mixture until well blended.
Chill the dough for about 2 hours until it's cold and firm (this makes it the easiest to work with when rolling out the dough for using your cookie cutters). Roll dough thin for nice, crisp cookies.
Secret: Put dough in the fridge (as needed) to keep the dough at the right consistency in between rolling & cutting.
Bake for 5-8 minutes & cool completely before frosting & decorating.
Decorator Cookie Icing Ingredients:
1 cup of powdered sugar
1 Tablespoon softened butter
1/4 teaspoon of cream of tartar
1 pinch of salt
1 Tablespoon of milk
1 teaspoon of vanilla extract
Directions:
In a mixing bowl, combine all ingredients on low speed until blended. Gradually add in a little milk or powdered sugar until you get a spreadable consistency. Beat for about 2 minutes until well blended. Add food coloring as desired.
(To make a larger batch, just double or triple the recipe as needed). This can also be made ahead of time and refridgerated. As the frosting warms up to room temperature, add milk as needed to bring frosting back to the consistency desired. ENJOY!!!
