Garbanzo Bean Salad



Ingredients:


  • 1 can of 15 1/2 oz. Garbanzo Beans (Ceci Beans)

  • 6 stems parsley

  • 6 stems green onions (“scallions”)

  • 4 large cloves peeled garlic

  • 3 stalks celery

  • 1/2 tsp. thyme

  • 1/2 tsp. oregano

  • Salt and pepper to taste

  • 6 Tbsp. good quality olive oil (Olive oil to red wine vinegar ratio is 3 to 1; adjust to your taste.)

  • 2 Tbsp. good quality red wine vinegar


Directions:


Drain beans then place in container.  Chop parsley without stems.  Chop green onions including two inches of the green.  Run garlic through a garlic press.  Use tender part of celery with some leaves.  


Mix all that with beans, add the seasonings. Sprinkle the oil and vinegar over all and mix well. 


Cover with plastic wrap and let salad sit out of refrigerator as you want all of this to marry.  Best if made a day ahead.
