Sweet Potato Casserole
Ingredients:
4-5 large sweet potatoes
1 1/2 cups of mini marshmallows (Optional, but highly recommended)
1 stick of salted butter
1 cup of granulated sugar
1/4 cup of brown sugar
1 Tablespoon of vanilla
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/4 teaspoon of ground clove
Directions:
Start by preheating the oven to 350 degrees. Then, begin peeling the sweet potatoes and cutting them into 1/2 inch rounds. Place each piece into a 9x13 casserole dish.
Over medium heat, begin to melt the butter in a large skillet or pan. Add in the sugar, brown sugar, cinnamon, nutmeg, and ground clove. Turn off the stove, and mix the ingredients until the sugar dissolves. Once this step is complete, stir in the vanilla.
Pour the butter and sugar mixture over the sweet potatoes until they are evenly coated. Wrap foil over the dish and place it in the oven for 30 minutes. Then, take it out to stir the sweet potato mixture in order to spread the sauce over every piece. Cover the dish again and stick it back in the oven for an additional 10-15 minutes. Remove the casserole one last time to add the mini marshmallows on top. For another 5 minutes, or until the marshmallows are golden and gooey, put the dish back into the oven uncovered.
Let cool for at least 10 minutes and it will be ready to be served.
